Quick and Easy Dishes Recipes From The 'Cooklets'

Red Lentil Soup

Serves: 4 people
Preparation time: 30 minutes
Utensils: Medium pot with lid

Ingredients:
1 cup red lentils
1 onion diced
1 carrot rinsed and diced
1/4 cup celery rinsed and diced
4-6 cups spring water
1 tablespoon minced parsley
1 tablespoon brown rice miso diluted in a little water

Preparation:

Place the onions into a pot and cover with water. Bring to a boil on a medium flame and simmer for about 2-3 minutes.

Layer the celery, carrot and then the lentils on top of the onions and cover with a lid. Add enough water to cover the lentils.

Bring to a boil on a medium flame. Reduce the flame to low and simmer for about 20 minutes or until the lentils are soft.

Add the rest of the water. Return to a boil and add the miso. Reduce the flame to low and simmer for about 3 minutes.

Serve garnished with parsley.


Garlic Rice

This is a traditional Portuguese dish that is very rich and satisfying and will have your guests wondering if you added butter.

Serves: 4-6 people
Preparation time: 1 hour
Utensils: Heavy pot with lid

Ingredients:
2 cups long grain brown rice
3 cups spring water
3 cloves garlic sliced
1-2 tablespoons olive oil
1 teaspoon sea salt

Preparation:

Place the garlic and oil into a pan. Sauté on a high flame for about 1-2 minutes.

Reduce the flame and place the rice on top of the garlic. Add the water and salt.

Cover and bring to a boil on a medium flame. Simmer on a low flame for about an hour.

Place the rice in a large wooden or ceramic bowl and gently separate the grains with the rice paddle.

Cover the rice with a sushi mat and serve.


Sweet and Sour Shrimp

A big favorite with my kids!

Ingredients:
1/2 pound cooked shrimp sliced
2 tablespoons balsamic vinegar
2 tablespoons brown rice vinegar
2 tablespoons shoyu
1 tablespoon mirin, sake or red wine
1 tablespoon rice syrup
1 tablespoon sesame oil
1 teaspoon minced fresh ginger
1 teaspoon minced fresh garlic
1 cup fresh or frozen organic peas
2 scallions rinsed and finely sliced
1 tablespoon kuzu diluted in a little cold water
1/2 cup spring water
4 cups cooked brown rice

Serves: 4-6 people
Preparation time: 15 minutes
Utensils: Large skillet

Preparation:

Combine the shoyu, vinegar, rice syrup, mirin and water. Warm a skillet on a medium flame and add the sesame oil.

Lightly sauté the ginger and garlic for about 30 seconds. Add the shrimp, peas and scallions and sauté for about 1 minute or until heated through.

Add the shoyu mixture and the diluted kuzu and stir until the sauce thickens or for about 1-2 minutes.

Serve immediately on top of hot, freshly cooked brown rice.


Steamed Leeks with Mustard Dressing

Ingredients:
2 leeks washed and sliced
1/2 cup spring water
Pinch sea salt

Dressing:
1 tablespoon tahini
1 teaspoon mustard
1-2 teaspoons shoyu
1 tablespoon mirin
Small amount spring water

Preparation:

Place the water, leeks and salt in a pan. Cover with a lid and bring to a boil on a high flame.

Cook for about three minutes. Remove the leeks and place on a serving dish.

Place the dressing ingredients in a suribachi or a blender. Blend to a smooth creamy texture.

Pour over the leeks and serve.
