Millet, A Very Hearty Grain Millet is the tiny round, yellow that many folk associate with bird’s food!! It is in fact a very hearty grain and one of the most widely used. Millet is eaten in China, Japan, Korea, India and Africa. Millet is very good for strengthening the stomach, spleen and pancreas and for overall vitality. It also helps you to feel strong and grounded. This dish is excellent for the end of summer and throughout the fall, Millet helps you to feel secure, stable and nourished. ‘Moreish’ Millet and Sweet Vegetables This lovely dish will leave you wanting more!! Lots of sweet vegetables and sesame oil give the millet a rich, deeply satisfying flavor. There is plenty left to make yummy squares for lunch the next day too. Serves: 4 people Ingredients: Preparation: Heat the oil in a pan and add the onion. Saute for about 2 minutes. Add the millet and continue to saute for another 3 minutes. Add the water and place the squash on top of the millet. Add the sea salt. Cover and bring to a boil. Simmer on a low flame for 25-30 minutes. Mix gently and place in a serving dish. Serve garnished with sauerkraut. You can also place half the cooked millet into a square dish. Smooth the top and leave to firm. The millet can be cut into squares and fried or served with a touch of tahini mixed with miso and ginger. |
