 This cake is really yummy and easy, and you can whip it up in no time at all

 

Ingredients

1 cup whole wheat pastry flour

¼ cup unbleached white flour
3/4 cup maple syrup
1/3 cup unsweetened cocoa powder
1 heaping teaspoon baking powder
1/2 tsp salt
1 cup warm water or sparkling water

Rind of an  orange

1 tsp vanilla extract
1/3 cup coconut oil warmed to liquid

1 teaspoon apple cider vinegar

Chocolate Glaze

1/4 cup maple syrup
3 tablespoons coconut oil
4 tablespoons soymilk

2 tablespoons orange juice
2 tablespoons unsweetened cocoa powder

2 tablespoons grain sweetened chocolate chips

1 teaspoon orange rind
2 tsp vanilla extract

 

Decoration Ingredients

2 tablespoons chopped and roasted walnuts

Orange slices

 

Preparation

Pre-heat the oven to 350 degrees

Oil and 8 inch by 8 inch pan.

Place the flours, salt and cocoa powder into a bowl.

Whisk lightly.

In a separate bowl, place the maple syrup, oil, orange juice and rind, water and vanilla.

Whip with a fork until well mixed.

Add to the dry ingredients and mix to a smooth batter.

Add the baking powder and mix well.

Pour into the baking pan.

Place in the over and bake for about 25-30 minutes or until the cake pulls away from the edge of the pan.

Remove from oven and cool for a few minutes.

Remove cake from pan and cool.

 

Meanwhile, place the Glaze ingredients into a pan.

Heat on a low flame until melted.

Mix well.

Pour the glaze over the cake.

Decorate with orange slices and chopped walnuts.
