Serves: 8 people Ingredients:1 cup roasted almonds finely chopped (can do this in a blender) 1 cup oat flour 1/2 cup maple syrup or rice syrup Jam 1 tablespoon chopped almonds for the top Preparation:Pre-heat the oven at 350 degrees.Mix the nuts, flour, oat flour and salt together and make a well in the center. Whip the oil, syrup, vanilla and almond essence using a fork. Add the wet ingredients to the dry. Form a dough and press two thirds into a nine inch pie dish. Spread jam over the top. Crumble the remaining dough and chopped almonds over the top of the jam. Bake in an oven for 15-20 minutes. Idea: A variety of different flavored jams can be used; apricot, raspberry, strawberry, blueberry or cherry. |
