Stuffed Cucumbers

Serves: 4 people
Preparation time: 10 minutes

Ingredients:

1 European cucumber peeled
1/4 block firm tofu mashed
1-2 teaspoons umeboshi vinegar
Few drops shoyu
1 teaspoon finely diced roasted red pepper (can be purchased in a jar)
1 teaspoon capers
1 teaspoon finely chopped chives

 

Preparation:

  1. Mix the tofu, umeboshi vinegar, shoyu, peppers and capers.
  2. Scoop out the seeds from the cucumber.
  3. Stuff the cucumber with the tofu mixture.
  4. Leave to sit for about 30 minutes.
  5. Slice into bite size pieces and serve garnished with chopped chives.
