Sweet and Sour Seitan Recipe

A rich nourishing dish that is perfect for cold weather.

Ingredients:
1 cup seitan finely sliced (you can buy this already prepared)
1 onion finely sliced
1 cup mushrooms finely sliced
1 tablespoon sauerkraut
1 teaspoon mustard
1 tablespoon sesame oil
1 tablespoon mirin rice wine
½ cup spring water
1-2 teaspoons shoyu
½ cup fresh or frozen green peas

Preparation:

Heat a skillet on a low flame.

Add the oil and then turn the flame to high.

Add the onions and aute for about 1-2 minutes.

Add the seitan and saute for another 2 minutes.

Add enough water to cover the bottom of  the skillet.

Add the sauerkraut, mirin and mustard and mix through.

Season with shoyu.

Cover and cook for about 5 minutes.

Add the peas and cook a further minute.

Mix gently and serve with piping hot brown rice and freshly blanched broccoli.
